These Mint Brownies are a rich and fudgy treat layered with creamy peppermint frosting and smooth chocolate ganache. They’re easy to make with a brownie mix or homemade base—and perfect for holidays, bake sales, or anytime you’re craving that classic mint-chocolate combo!

Chocolate Ganache:

1cupsemi-sweet chocolate chips
Instructions
Bake the brownies: Preheat oven to 350°F. Line or grease a 8x8 or 9x9-inch pan. Prepare and bake brownies according to package or homemade recipe. Cool completely in pan before frosting.
1 (18-oz) box brownie mix + ingredients on package
Make mint frosting: Beat butter until smooth. Add powdered sugar, cream, peppermint extract, and food coloring. Mix until fluffy and spread over cooled brownies in pan. Chill for 15–20 minutes to set.
½ cup butter, 2 cups powdered sugar, 2 tablespoons heavy cream or whole milk, ¾ teaspoon peppermint extract, 1 drop green food coloring
Make chocolate ganache: Melt butter and chocolate chips over low heat, stirring until smooth. Cool slightly (about 5 minutes), then spread over chilled frosted brownies in pan. Refrigerate for 30–60 minutes until firm.
6 tablespoons butter, 1 cup semi-sweet chocolate chips
Slice & serve: Let sit at 10-15 minutes before slicing to prevent cracking. Carefully remove from pan. Use a warm knife and wipe after each cut for clean cuts. Enjoy!
Notes
Let the brownies cool completely before frosting, or the frosting may melt.
Chill brownies between each layer for clean slices: 15–20 minutes after frosting, 30–60 minutes after adding ganache.
Use peppermint extract (not mint extract) for the best flavor.
For clean cuts, slice with a sharp knife warmed under hot water and wiped dry between cuts.
Store covered in the fridge for up to 5 days. Brownies also freeze well for up to 2 months.
