Oven Fried Chicken

Ingredients
Chicken, buttermilk, egg, flour, breadcrumbs, baking powder, salt, pepper, ground paprika, garlic & onion powder and butter.
Prepare breading mixes

Whisk the buttermilk and egg in a medium bowl, and combine all of the dry ingredients in a shallow dish. Cut the chicken into large pieces.
Bread chicken

Toss the chicken in the breadcrumb mixture. Shake off any excess flour, then coat with egg wash. Finally, thickly coat each chicken piece with dry mix again
Bake

Melt the butter on the prepared, pre-heated pan (careful, hot, use oven gloves and keep kids/pets away!), then add the chicken. Bake for 10-12 minutes.
Flip, then finish baking

Very carefully flip the chicken, add more butter if needed. Then finish baking for another 8-10 minutes.
Finish

For an extra-crispy finish, place under the broiler for 1-2 minutes. Allow the the chicken to rest for 2-3 minutes, then serve immediately.
